That subject title is just to get your attention. I can't call my chili that cos it's been taken and I don't want to get sued, so the official name is IDAHO FALLS CHILI. Idaho isn't a Chili state like Texas, so it's not many of the locals' idea of chili.
First, some rules about super bowl eats:
1 Absolutely no pastries of any kind, including pies, cakes, cookies, muffins, puddings and sweet rolls
2 Hot dogs are allowed, but not Dodger Dogs (only at Dodger Stadium, where they taste best), and none of those wimpy Oscar Mayer dogs. Rather, those bold quarter pound Jewish dogs imported from Israel.
3 Anything from the BBQ grill is allowed especially buffalo wings
4 Chips and salsa and guacamole is allowed
5 Beer is the only alcholic beverage allowed
6 No coffee, hot tea or kool aid. Any fruit juice is allowed.
7 And the ultimate sports buff's food, PIZZA is all but mandatory!
NOW FOR THE MAIN EVENT:
IDAHO FALLS CHILI
Start with 6 lbs of chuck beef cut up (ground is OK but not if you like texture) and brown it, then put in callandar to drain the fat
Meanwhile, brown 1 large yellow onion with 4 cloves garlic, then add the meat and mix up
Next, pour in 24 oz cerveza and stir for about a minute
Add a 46 oz can diced tomatoes and 6 oz tomato paste
Add the juice of 1 large lime with 2/3 bunch cilantro and bring it all to a boil
Add 2 jalapanos cut up
Add 1/4 C salt, 1 T Mexican oregano, 6 T cumin, 3 oz California chile powder, 3 oz New Mexico chile powder, 3 oz Pasilla chile powder, 3 oz paprika, 1/2 T chipotle powder.
Add some water so it won't burn
Now, mix it real good, turn the fire to simmer and, as Archie Bunker used to say, "put a lid on it", and leave it alone for 2 hours, 12 minutes. Check on it to see how much water has boiled away. Then, take the lid off and let it keep simmering for about 31 more minutes or till enough water has boiled away. Be sure to have some corn bread with it.
